Perfect for baking, adding to hot chocolate or for simply snacking on, veggie marshmallows are as versatile as they come. And just when you think they couldn’t get any better, you find out they make the most mouth-watering addition to a good old Rocky Road.
So, how does one make a delicious veggie marshmallow Rocky Road that is completely vegan and free from the top 14 allergens you say?! We’ll let you into a secret… It's actually really easy to make.
Veggie Marshmallows Rocky Road Ingredients
First and foremost you will need 120g of veggie marshmallows. We (strongly) recommend some of our heavenly Vegan Mini Mallows. You can purchase these from any of our stockists including Sainsbury’s, Holland & Barrett, Ocado and good independent health stores.
Once you’ve got the veggie marshmallows covered, here’s what else you’ll need to make these tasty treats:
2x bars of vegan chocolate
150g dairy free butter
60g golden syrup
240g vegan wholemeal digestive biscuits
60g diced candied orange peel
Icing sugar for decoration
How to make Rocky Roads with Veggie Marshmallows:
Now that you’ve got all your ingredients, the real magic can begin. Start by adding your vegan chocolate, butter and golden syrup to a heatproof bowl. Place the bowl over a boiling hot saucepan until you’re left with some gooey melted goodness.
Add in your digestive biscuits and give it a good mix until the biscuits are completely coated with chocolate.
Then, add your Vegan Mini Mallows and mix until they’re thoroughly coated in chocolate.
Add your candied orange peel and give the mixture another mix until fully coated.
Tip the mixture into a lined baking tin, and spread the mixture out to each corner. Chill for at least 2 hours then dust with icing sugar and sprinkle some Vegan Mini Mallows. Cut into 12 fingers and serve.
And viola! You have successfully made the yummiest little treats. Place in the fridge and enjoy as snacks or box them up in some Tupperware and take them on a little picnic with your loved ones. Whatever your plans, we hope you enjoy them!
